Otkrio sam da kuhinja najbolje funkcionira ako imate dvije vrste pri ruci: vrhunsko ekstra djevi\u010dansko maslinovo ulje za preljeve i zavr\u0161na jela i jeftinije standardno djevi\u010dansko maslinovo ulje za metode kuhanja na vi\u0161im temperaturama poput pe\u010denja.<\/p>\n\n\n\n<p><strong>Mediteransko bilje <\/strong>pru\u017ea mnogo vi\u0161e od samog okusa &#8211; nosi impresivne zdravstvene prednosti, uklju\u010duju\u0107i pobolj\u0161anu probavu, ni\u017ei kolesterol i svojstva u prevenciji i borbi protiv raznih bolesti.<\/p>\n\n\n\n<p>Moja osnovna kolekcija bilja uklju\u010duje:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Origano, bosiljak i metvica (temelj gr\u010dkih i talijanskih jela)<\/li>\n\n\n\n<li>Maj\u010dina du\u0161ica, ru\u017emarin i kadulja (savr\u0161eno za pe\u010deno meso i povr\u0107e)<\/li>\n\n\n\n<li>Per\u0161in i kopar (uljep\u0161avaju prakti\u010dki svako mediteransko jelo)<\/li>\n<\/ul>\n\n\n\n<p>Osim za\u010dinskog bilja, <strong>mediteranski za\u010dini<\/strong> stvaraju dubinu i karakter u jednostavnim receptima za ve\u010deru mediteranske prehrane. Slijedom toga, u ladici za za\u010dine uvijek dr\u017eim kim, papriku (slatku i dimljenu), prah cimeta i crvene paprike. Posip su\u0161enog origana ili malo kima mo\u017ee osnovne sastojke pretvoriti u nezaboravna jela uz minimalan napor.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Cjelovite \u017eitarice i mahunarke<\/h3>\n\n\n\n<p>Cjelovite \u017eitarice pru\u017eaju zadovoljavaju\u0107u osnovu za bezbroj brzih i jednostavnih recepata mediteranske prehrane. Za razliku od rafiniranih \u017eitarica, ove nutritivne snage poma\u017eu u smanjenju rizika od dijabetesa tipa 2, pobolj\u0161avaju razinu \u0161e\u0107era u krvi i sni\u017eavaju kolesterol.<\/p>\n\n\n\n<p><strong>Bulgur p\u0161enica<\/strong> zaslu\u017euje posebnu pozornost zbog svoje svestranosti i brzog vremena kuhanja &#8211; uglavnom zahtijeva rehidraciju, a ne produ\u017eeno kuhanje. U smo\u010dnici uvijek imam zalihe:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Kus -kus i orzo<\/strong> (savr\u0161eni 10-minutni prilozi)<\/li>\n\n\n\n<li><strong>Farro i je\u010dam<\/strong> (izda\u0161nije opcije za zdjele za \u017eitarice)<\/li>\n\n\n\n<li><strong>Sme\u0111a ri\u017ea i kvinoja<\/strong> (izvrsna baza za jela prepuna proteina)<\/li>\n<\/ul>\n\n\n\n<p><strong>Mahunarke <\/strong>su nedvojbeno neopjevani heroji mediteranske smo\u010dnice. Ovi jeftini izvori proteina dodaju bogatstvo i hranjive tvari svemu, od salata do variva. \u010cini se da slanutak posebno pronalazi put do mnogih mojih jednostavnih recepata za mediteransku prehranu &#8211; bilo da je pomije\u0161an u humus, pe\u010den kao me\u0111uobrok ili dodan u lonce uz \u017eitarice.<\/p>\n\n\n\n<p>Studije sugeriraju da mahunarke mogu pomo\u0107i u smanjenju rizika od dijabetesa tipa 2, smanjenju razine \u0161e\u0107era u krvi i smanjenju kolesterola. Imati i konzervirane (radi prakti\u010dnosti) i su\u0161ene (za ekonomi\u010dnost) varijante osigurava da ste uvijek spremni i za kuhanje iz temelja, ali i za brze obroke.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Svje\u017ee povr\u0107e i nemasni proteini<\/h3>\n\n\n\n<p>Svje\u017ee povr\u0107e \u010dini \u0161arenu okosnicu mediteranske kuhinje. Stoga se pobrinem da i moja kuhinja uvijek ima raj\u010dice, krastavce, papriku, lisnato povr\u0107e i luk &#8211; gra\u0111evne blokove za bezbroj recepata za mediteransku ve\u010deru.<\/p>\n\n\n\n<p>Mediteranska prehrana nagla\u0161ava biljnu hranu, ali uklju\u010duje skromne koli\u010dine \u017eivotinjskih proteina. Riba i plodovi mora pojavljuju se najmanje dva puta tjedno u tradicionalnim mediteranskim obrascima prehrane, s opcijama kao \u0161to su:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Losos i srdele (bogate omega-3 masnim kiselinama)<\/li>\n\n\n\n<li>\u0160kampi i dagnje (izvori proteina za brzo kuhanje)<\/li>\n\n\n\n<li>Bijela riba poput bakalara ili tilapije (blage opcije za obiteljske obroke)<\/li>\n<\/ul>\n\n\n\n<p>Studije pokazuju da<strong> piletina<\/strong> pru\u017ea va\u017ene hranjive tvari poput selena, B6 i niacina, \u0161to je \u010dini jo\u0161 jednim izvrsnim izborom proteina. Otkrio sam da dr\u017eanje smrznutih ribljih fileta i piletine bez kostiju u zamrziva\u010du osigurava da uvijek imam na raspolaganju nemasne proteine za jednostavne recepte mediteranske prehrane.<\/p>\n\n\n\n<p>Zadr\u017eavaju\u0107i ove bitne sastojke u svojoj kuhinji, prirodno \u0107ete gravitirati prehrani u mediteranskom stilu &#8211; ne zato \u0161to slijedite pravila, ve\u0107 zato \u0161to ove aromati\u010dne komponente \u010dine stvaranje ukusnih, hranjivih obroka prakti\u010dki bez napora.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Jaja u mediteranskoj kuhinji<\/h3>\n\n\n\n<p>Jaja zaslu\u017euju po\u010dasno spominjanje kao svestrani izvor proteina koji mo\u017ee pretvoriti jednostavnu zdjelu od povr\u0107a ili \u017eitarice u cjelovit obrok. Posebno su korisni pri stvaranju recepata za mediteransku prehranu koji su dovoljno jednostavni za u\u017eurbane radne no\u0107i.
