Za tijesto pomije\u0161ajte bra\u0161no s hladnom vodom, lagano umije\u0161ajte \u010dvrsto istu\u010deni bjelanjak i \u017elicu maslinovog ulja. Za preljev izmiksajte raj\u010dicu s hrenom, \u010de\u0161njakom i octom. Dodajte Tabasco, sol i ocat. Prilagodite koli\u010dinu Tabasca prema vlastitom ukusu \u2013 treba biti ljuto i aromati\u010dno. Smjesu protisnite kroz fino sito kako bi nestali svi krupniji komadi\u0107i. Tako \u0107ete dobiti fini glatki preljev. Provjerite je li dovoljno za\u010dinjen solju i paprom. Zagrijte fritezu na 180 stupnjeva pa u vru\u0107e ulje na 25 sekundi uronite rukolu da omek\u0161a i postane hrskava. Izvadite ju iz ulja i ostavite da se ocijedi na papirnatom ubrusu. Kamenice redom uronite u tijesto, izvadite \u017elicom i pr\u017eite 2 minute, dok ne postanu hrskave i zlatno\u017eute.
