Mnoge masno\u0107e i ulja za pr\u017eenje imaju relativno visoku temperaturu dimljenja, oko 250 stupnjeva C, me\u0111utim maslac ima relativno nisku temperaturu dimljenja, ve\u0107 na oko 120 stupnjeva C. Zbog toga se koristi za namirnice kojima ne treba visoka temperatura pri termi\u010dkoj obradi. Maslac je posebno prikladan za razne umake, te doprinosi njihovoj kremastoj teksturi i bogatijem okusu.
