Ova gastro tradicija, nije samo priprema jela nego pravi ritual, oko kojeg se vrti doma\u0107a kuhinja nekoliko dana.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Bakalar recept<\/h3>\n\n\n\n<p>Na ovaj na\u010din priprema se su\u0161eni bakalar u ve\u0107ini tradicionalnih dalmatinskih doma\u0107instava na Badnjak i na Veliki petak ili subotu. Ovo je jelo koje obilje\u017eava ova dva najve\u0107a kr\u0161\u0107anska blagdana i u kojem se u\u017eiva u Dalmaciji svake godine o Bo\u017ei\u0107u i o Uskrsu.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Sastojci bakalar<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Su\u0161eni bakalar<\/li>\n\n\n\n<li>Poriluk<\/li>\n\n\n\n<li>Luk (kapula)<\/li>\n\n\n\n<li>1 dl maslinovog ulja<\/li>\n\n\n\n<li>1 re\u017eanj \u010de\u0161njaka<\/li>\n\n\n\n<li>per\u0161in<\/li>\n\n\n\n<li>1 \u017elica mljevene crvene paprike<\/li>\n\n\n\n<li>1 dl pasirane raj\u010dice<\/li>\n\n\n\n<li>sol, papar i vegeta<\/li>\n\n\n\n<li>oko 1 kg krumpira (po \u017eelji mo\u017ee i vi\u0161e i manje ovisno za koliko ljudi radite bakalar)<\/li>\n\n\n\n<li>1 dl vina<\/li>\n\n\n\n<li>1 \u017elica meda<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Priprema<\/strong> su\u0161enog bakalara<\/h4>\n\n\n\n<p>Potopiti cijeli bakalar u duguljastoj posudi u vodu. Ako je vakumirani mo\u017eete&nbsp; 24 sata do 48 sati, a ako je tvrdo su\u0161eni oko 3-7 dana.&nbsp; Svaki dan mijenjati vodu.<\/p>\n\n\n\n<p>Na dan kuhanja rezati bakalar na komade pribli\u017eno 7 cm.&nbsp; Staviti u hladnu vodu i lagano kuhati.&nbsp; Kada prokuha neka kuha jo\u0161 5-10 minuta.<\/p>\n\n\n\n<p>Izvaditi bakalar da se hladi, a ne bacati vodu od kuhanja jer \u0107e se kasnije jo\u0161 upotrijebiti.<\/p>\n\n\n\n<p>U dublju tavu iskri\u017eati poriluk i kapulu na kolutove.<\/p>\n\n\n\n<p>Dinstati na malsinovom ulju dok ne omek\u0161a. Paziti da ne posme\u0111i.&nbsp; Mije\u0161ati stalno. Kada je pri kraju dodati \u010de\u0161njak i per\u0161in. Dodati mljevenu crvenu papriku i raj\u010dicu, te&nbsp; malo soli, papra i vegete. Su\u0161eni bakalar mo\u017ee dugo trajati, a bogat je bjelan\u010devinama i vitaminima, stoga nije neobi\u010dno da su to bile prednosti koje su u pro\u0161losti bile bitne. Iako je danas dostupnija hrana tijekom cijele godine, te se za raznovrsnost prehrane ne moramo oslanjati na su\u0161ene ili usoljene proizvode za zimnicu, tradicija se zadr\u017eala, te je za blagdane posebno, i danas su\u0161eni bakalar \u010dest izbor. Kod nas se pod su\u0161enim bakalarom govori su\u0161enom na zraku, dok se pod sli\u010dnim nazivima mo\u017ee na\u0107i i usoljeni bakalar koji se su\u0161i uz dodatak soli. Glavna razlika je \u0161to ovaj koji se su\u0161io u soli sadr\u017ei ve\u0107u koli\u010dinu soli te \u0107e kod kuhanja trebati prilagoditi koli\u010dinu soli. Njega bi bilo dobro isprati prije namakanja u vodu, kako bi se prvo isprao povr\u0161inski sloj soli.<\/p>\n\n\n\n<p>Ovo je jedan od osnovnih, tradicionalni recept kako se priprema su\u0161eni bakalar, ali postoje brojne varijante recepte, te se mogu dodati drugi za\u010dini, kao i neko drugo povr\u0107e. Tako je kod ve\u0107ine recepata, budu\u0107i da se godinama prave, a onda i prilago\u0111avaju ukusima, pa svaka obitelj ima svoju varijantu koju priprema i koju obitelj najvi\u0161e voli.<\/p>\n\n\n\n<p>Danas s mogu na\u0107i i smrznuti fileti bakalara koji mogu biti opcija za one koje se ne \u017eele odre\u0107i okusa i tradicije bakalara, ali nemaju vremena za dugu pripremu i namakanje su\u0161enog bakalara.
