Pe\u010denu puricu izvadite iz pe\u0107nice i ostavite da se malo ohladi. Sok koji se iscijedio iz purice malo podlijte, prokuhajte, procijedite i stavite na toplom do upotrebe. Da bi purica bila ukusna i so\u010dna, treba je zalijevati sokom koji je pustila za vrijeme pe\u010denja, ili juhom. Oko mesa mora biti dosta teku\u0107ine da ne zagori.<\/p>\n\n\n\n<p>Mlince izlomiti na manje dijelove i preliti kipu\u0107om vodom. Ostaviti 3-5 minuta, to \u0107e ovisiti o veli\u010dini, debljini i tvrdo\u0107i mlinaca. Potom treba iscijediti vodu koja je vi\u0161ak. (Mlince preliti kipu\u0107om teku\u0107om vodom, u njoj se ni\u0161ta nije kuhalo nego obi\u010dna voda s zagrijala.)<\/p>\n\n\n\n<p>Kod poslu\u017eivanja mlince servirati i preliti s masno\u0107om i teku\u0107inom koja je ostala u plehu od pe\u010denja purice. To je dodatni razloga da podlijevate puricu, ona se ne\u0107e osu\u0161iti ili zagoriti, a tu ukusnu teku\u0107inu se poslije iskoristi za prelijevanje mlinaca. <\/p>\n\n\n\n<p>Na taj na\u010din se pripremaju i doma\u0107i i kupovni gotovi mlinci.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Mlinci<\/strong> &#8211; kako pripremiti doma\u0107e mlince<\/h3>\n\n\n\n<p>Od bra\u0161na, jaja, mlake vode i soli zamijesite polu\u010dvrsto tijesto kao za rezance. Tijesto podijelite u vi\u0161e loptica te\u017eine 5 dag (50 grama) i razvaljajte kao za savija\u010du. Razvaljeno tijesto pecite na srednje ugrijanoj ravnoj lijevanoj plo\u010di od \u017eeljeza (ili tavi od lijevanog \u017eeljeza) s jedne i sa druge strane, dok svijetlo ne porumeni i dok se ne osu\u0161i. Ovako osu\u0161ene i ispe\u010dene mlince izdrobite, stavite u posudu, zalijte kipu\u0107om slanom vodom, pokrijte poklopcem i pustite kratko vrijeme, oko 2 minute, da se mo\u010de.<\/p>\n\n\n\n<p>Namo\u010dene mlince ocijedite i jo\u0161 vru\u0107e dobro zamastite sokom od pe\u010denja. Iako se radi o jelu za vi\u0161e osoba, proces pripreme nije posebno kompliciran, posebno ako se dan ranije pripremi purica, te se onda samo stavi u rernu za pe\u010denje i potom povremeno provjerava i podlijeva. No, ve\u0107inu vremena ste slobodni i mo\u017eete se baviti drugim stvarima.<\/p>\n\n\n\n<p>Ista stvar je i s mlincima. I mlinci se mogu pripremiti unaprijed, bake su ih \u010desto imale u zalihi i spremne za brze obroke kada se nije imalo vremena za du\u017ee pripreme. Ako se unaprijed pripreme mlinci, odnosno naprave i osu\u0161e, tada je njihova priprema prije poslu\u017eivanja prili\u010dno kratka, traje svega 5 minuta, a to se mo\u017ee napraviti i prije samog poslu\u017eivanja obroka. Na taj na\u010din se mo\u017ee lako prilagoditi ako netko kasni ili ru\u010dak treba krenuti kasnije. \u010cak i ako je purica ve\u0107a i treba joj du\u017ee vremena, mlinci nisu s njom u pe\u0107nici, te se ne moramo brinuti da li \u0107e se prepe\u0107i ili raspasti. Upravo to \u010dini ovo jelo odli\u010dnim izborom za ve\u0107i ru\u010dak <\/p>\n\n\n\n<p>Purica je ve\u0107a, ona i ako se napravi koji sat ranije mo\u017ee dr\u017eati temperaturu u toploj pe\u0107nici (samo je poklopite da se ne bi isu\u0161ila). A mlinci se mogu pripremiti kad trebaju.<\/p>\n\n\n\n<p>Tako\u0111er, prednost je \u0161to kada se radi cijela purica ima raznih dijelova mesa, tako da svatko mo\u017ee ne\u0161to izabrati za sebe, te nije da se unaprijed morate odlu\u010diti koje \u0107e se meso poslu\u017eiti gostima, odnosno koji dio mesa nego se mo\u017ee birati, ovisno o preferencijama gostiju.<\/p>\n\n\n\n<p>Jednostavnija varijanta je pure\u0107i batak s mlincima, a njegova prednost je i \u0161to se mo\u017ee raditi za manji ru\u010dak i br\u017ee je gotov.
